An Introduction to Wine and Wine Tasting (6 weeks)

Our introduction to Wine and Wine Tasting course is ideal for beginners and those looking to understand how the wine was made, where it comes from and if you should be quaffing it now, or rather let it rest a few years first.

Week  1. Tasting and Evaluating Wine
Learn the tasting technique and how and why to record your findings.
Week  2. Conditions for Vine Growing and Wine Making
An introduction into the ideal conditions needed for grape production and winemaking. How do these conditions affect the finished wine?
Week  3. Classic Varieties
Learn to appreciate each grape variety for its own intrinsic qualities, note the differences between New and Old world versions of each type.   Sauvignon Blanc, Chardonnay and Pinot Noir.
Week 4. Classic Varieties
Riesling, Merlot, and Cabernet Sauvignon.
Week  5. Classic Varieties
Semillon, Chenin Blanc, and Syrah.
Week 6. Champagne and Sparkling Wine
An introduction into the methods of Sparkling Wine production. Understand the differences such methods have on the finished product

Exploring the World of Wine part 1 (6 weeks)

Explore the wine regions of the world in a little more detail and get to know the most important wines and grape varieties of those regions. This course is suitable from beginner although a little knowledge can be helpful, we will always take into account the level of the group as a whole.
Week 1. Bordeaux
Week 2. Australia
Week 3. Central Italy
Week 4. California
Week 5. Northern Spain
Week 6. Burgundy

Exploring the World of Wine part 2 (6 weeks)

Explore the wine regions of the world in a little more detail and get to know the most important wines and grape varieties of those regions. This course is suitable from beginner although a little knowledge can be helpful, we will always take into account the level of the group as a whole.
Week 1.
 Northern Italy
Week 2. Loire Valley
Week 3. South America
Week 4. New Zealand
Week 5. Alsace
Week 6. Southern Spain

Exploring the World of Wine part 3 (6 weeks)

Explore the wine regions of the world in a little more detail and get to know the most important wines and grape varieties of those regions. This course is suitable from beginner, although a little knowledge can be helpful, we will always take into account the level of the group as a whole.
Week 1.
 Rhône Valley
Week 2. South Africa
Week 3. Southern Italy
Week 4. Germany
Week 5. Austria and Hungary
Week 6. Portugal including Madeira

Advanced Wine Appreciation (6 weeks)

This course is not suitable for beginners.

Week 1. Tasting and evaluating wine at an advanced level
The enjoyment of wine is undoubtedly enhanced by the knowledge gained from continuous tasting and recording. With practice we begin to associate descriptive words with the taste sensations we are experiencing; add that to the factual information and hopefully our understanding improves. This, in turn, allows us to go beyond the simple decision whether or not we like the wine, but also why!
Week 2. Viticulture and Vinification at an advance level
Explore viticulture, terroir, quality versus quantity, the importance of the vintage and the outcome from various vinification techniques right through to bottling.
Week 3. Classic grape varieties
Rediscover the classic grape varieties and learn to pick up differences between the regions/countries.
Week 4. Classic grape varieties
Rediscover the classic grape varieties and learn to pick up differences between the regions/countries.
Week 5. Other Major varieties
Discover the major varieties not covered by the classics which are however part of the world of fine wine.
Week 6. Champagne and Sparkling wine
Fine bubbles, carefully honed flavour balanced with the delicate autolytic nuances found in fine Champagne are the result of decades, sometimes centuries, of passed-down knowledge from one dedicated Chef du Cave to another.  Explore in more detail the wines made from the “method champenoise”.
